Cutie turkey meatloaf cupcakes!

Check out these cuties! If you are looking for such an easy, quick and grab and go meal to make then you should make these fun turkey meatloaf cupcakes with sweet potato "frosting".

I love the kind of recipes where you just mix everything together in a bowl then throw it in the oven. All I did was place my ground turkey, eggs, garlic powder, parsley, bread crumbs, ketchup, worcestershire sauce, salt and pepper and onion in a bowl and mixed it all together. I find it easiest to just use my hand so I combine all of the ingredients together. Once that is done, grab a greased cupcake tin and section the meat into equal portions. Roll the portion of meat into a ball and place in the muffin tin, give it a nice little pat so it fills out the tin but can still keep a little dome up top. Spoon a little of the ketchup mixture on the top of each cupcake and spread around evenly. Now you are ready to cook those suckers! Place your tins in the oven uncovered and cook for 30-35 minutes or until cooked through.

Meanwhile, start cooking your sweet potatoes. Peel and dice the potato and boil in how water until soft or until you can insert a fork easily. When finished drain the water and start mashing the potatoes, I added some milk (almond milk) into my potatoes until it was a consistency I liked. I like garlic in everything so I added some garlic powder and also some powdered butter flavoring to taste.

When your cupcakes are done, remove them from the tins and if desired, pipe the mashed potatoes onto your meatloaf cupcake. I personally like piping it on top because you get to enjoy everything in one bite, it is also very convenient if you need to grab and go.

 

Turkey meatloaf cupcake with sweet potato frosting

Ingredients:​

2 large sweet potatoes

2 lbs ground turkey (makes 13 regular sized meatloaves)

2 eggs

3 tablespoons garlic powder (or to taste)

1/2 cup dried parsley

1 cup bread crumbs

1/4 ketchup

3 teaspoons worcestershire sauce

1 cup of onion, diced (optional)

salt and pepper to taste

Molly McButter powdered butter flavoring (optional)

Ketchup topping (optional)

1 Cup ketchup

1/2 C. Brown sugar, packed

1 teaspoon worcestershire sauce

-Preheat the oven to 400°, grease muffin tins.

-If wanting a ketchup topping, mix together ingredients and set aside

-In a bowl mix together all of the ingredients until well combined.

-Divide the mixture into equal portions, form each portion into a ball and pat down into greased muffin tin, filling the tin with the mixture and leaving the top domed. Spoon a bit of the ketchup mixture on top of each muffin and spread evenly.

-Bake uncovered for 30-35 minutes, or until turkey is fully cooked

-When finished remove meatloaf from tins and if desired, pipe whipped mashed sweet potatoes on top of each muffin and garnish with a bit of parsley.

*If you use ground beef in place of turkey, expect it to shrink quite a bit...the meatloaves will not be as tall and shapely as ones made with ground turkey would be.

Mashed sweet potatoes

Peel and dice your sweet potato and boil in hot water until soft enough to insert fork. Once your potatoes are soft enough to mash start mashing them like you would if you were making normal mashed potatoes. I added some almond milk into my mashed potatoes while mashing until it was a consistency I was happy with. If desired, feel free to add seasonings to taste. I added some garlic powder as well as Molly McButter powdered butter flavoring.
