Yummy Spaghetti Squash

Ok here is the post again! I don't know why it went up and then disappeared so sorry about that BUT Spaghetti squash is amazing...it is such a great replacement to regular noodles (even though nothing can really replace noodles) and I think you all will enjoy this. If you have never cooked with spaghetti squash it is super easy...

I made a little tutorial video to show you guys how you prepare the spaghetti squash.

Be very careful when cutting the spaghetti squash, sometimes it can be a little difficult so be sure not to slide and cut your fingers. To make it a little easier to cut I like to stick the whole squash in the microwave for 3-5 minutes to soften it up. You want it soft enough to make it easier for you to cut but not cooked all the way through. After you cut the squash in half place it face down on a baking pan and add a thin layer of water to the bottom of the pan. Stick it in a 400° oven for 20 minutes or until you can insert a fork into the skin.

While your spaghetti squash is cooking you can start your marinara sauce. Brown your ground turkey, then add in the garlic and onion and let that cook for a couple of minutes then add in all of your seasonings besides the bay leaf. Give that a good stir then add in your tomatoes. I like a little chunkier of a sauce so I added 1 can of petite diced tomatoes and 1 can diced tomatoes. If you do not like a chunkier sauce you can add a can of crushed tomatoes. Feel free to use fresh tomatoes if you have it as well, why not?? Now you can finally add in the bay leaf, if you want a milder taste you don't have to add it but trust me you will love all the flavor. Carefully mix in that bay leaf then allow your marinara sauce to simmer for a few minutes to allow everything to blend together nicely and for the moisture from the tomatoes to release and get all juicy. When you are ready to eat remove the bay leaf, you wouldn't want to take a big bite of that lol.

That is it! so simple :) All that is left to do is scoop your spaghetti squash onto your plate and top with the marinara sauce and parmesan if you would like and enjoy!

 

Spaghetti Squash and Marinara Sauce

Ingredients:

1 Spaghetti Squash

1 lb Ground Turkey

1/2 Medium onion, diced

2-3 Garlic Cloves, minced

2 tsp. Italian Seasoning

2 tsp. dried basil

1/2 tsp. dried Parsley

1/2 tsp. dried Oregano

1/2 tsp. Salt

1/2 tsp. Ground Pepper

1 Bay Leaf

1 can (14.5 oz) petite diced tomatoes

1 can (14.5 oz) diced tomatoes (for a less chunky sauce add in a can of crushed tomatoes instead)

Parmesan Cheese (optional)

Set oven to 400°. Put spaghetti squash in the microwave for 3-5 minutes to allow it to soften a bit to make it easier to cut. Cut the squash in half, scoop out all of the seeds and place face down in a pan. Add a thin layer of water to the bottom of the pan and stick pan in the oven for 20 minutes or until you can stab a fork into it fairly easy. Remove from oven and let it cool down a little so it isn't too hot to touch.

In the meantime, go ahead and starting making your marinara sauce. When your sauce is done and you're

ready to start plating the food use a fork to scrape out the sides of the squash so they become like noodles. Top with marinara sauce and parmesan cheese.

Marinara Sauce:

Brown the ground turkey until cooked through. Add in your onions and garlic and cook about 3 minutes until onions are transparent. Then add in the rest of the seasonings and diced tomatoes. Stir together then add the bay leaf. Let simmer for about 5-7 minutes to allow tomatoes to cook down and everything start to combine together.

Once you plate everything up you can top it with some parmesan cheese and Enjoy!
