Aebleskivers aka "Puff Pancakes"

I LOVE Aebleskivers! you can make them as a breakfast OR as a dessert which is one of the reasons why I love them. Not to mention, they are bite size so you can eat more of them faster (hehe). Aebleskivers are a Danish treat and are basically a traditional pancake in the shape of a sphere. They are most commonly eaten at Christmas or special holidays leading up to Christmas. To get the sphere shaped you will need a special pan that has the indention's in it to make them but once you have that they are so simple and delicious.

Lets start by making the batter. Combine your dry ingredients the flour, sugar, baking powder and salt in a bowl. In a separate bowl, whisk the egg yolks, then add the milk and butter. Add the flour mixture and whisk until well combined, but still a little lumpy.In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form. Add 1/3 of the egg whites to the batter and gently fold to combine. Add the remaining egg whites and gently fold until just combined.

1st start by spraying your pan, once your pan is warmed up scoop about 1 tsp of batter into each indent.

If you want to add a filling you can add it now. I like putting Nutella or an apple pie filling in the middle of mine but some other ideas are fruit like blueberries, lemon curd, jam or scrambled eggs etc. and all you need is about a tablespoon full of filling. Scoop your filling on to your batter add just a little more batter on top of the filling to cover it.

Once your batter starts bubbling take your wooden skewer or a spoon or fork, whatever you desire to use, and flip your pancake over. Let it cook for another 2-3 minutes or until its golden brown on both sides.

When they are golden brown then they are ready to eat! Dress it up as you wish or dip it in maple syrup Yum Yum!

Ingredients:

1 Cup All-purpose flour

1 1/2 tsp Sugar

1/2 tsp Baking Powder

1/4 tsp Salt

2 Eggs, yolks and whites separated

1 Cup Milk

2 Tbsp unsalted butter, melted and room temperature

cooking spray

*anything you need for filling

Combine the flour, sugar, baking powder and salt in a bowl. In a separate bowl, whisk the egg yolks, then add the milk and butter. Add the flour mixture and whisk until well combined, but still a little lumpy.

In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form. Add 1/3 of the egg whites to the batter and gently fold to combine. Add the remaining egg whites and gently fold until just combined.

Spray the Aebleskiver pan with cooking spray and place on stove on medium heat. Once the pan is warm, spoon about 2 tbsp of batter into each indent. Dollop about 1 tsp of your filling into the center of each indent. Spoon enough batter on top to cover the filling and seal the pancake closed.

Once the surface begins to bubble, flip over the pancakes using your skewer, fork or spoon so that the cooked side is facing up. Cook until golden brown.
